Alluringly sweet and ethically made, Cartografie is a new chocolate company created by The Ritz’s ex-pastry chef Kae Shibata and Sven-Hanson Britt – with ingredients sourced directly from farmers.
Belgian chocolatier and pastry chef Pierre Marcolini’s Marylebone outpost is home to carousels of pastel-hued macarons and towers of éclairs in flavours ranging from lemon and bergamot to piña colada.
